You need all the energy you can get for your long fun-filled day and if we are being honest, having a can of baked beans or just a bowl of cereal may not be enough. Breakfast Burrito
A Breakfast Burrito is a simple, quick and delicious breakfast option especially if you don’t plan on building a fire. The good thing about this burrito is that there is no set way of making it as you can fill it with your preferred breakfast staples like eggs, sausage or bacon. You can easily make this meal a day before or pre-make it at home to save you some time as all you will need to do is heat it up.
Ingredients you will need include;
- Tortilla wrap
- Eggs
- Bacon
- Onion
- Sausages
- Cheese
- Hash browns or potatoes
- Tomatoes (optional)
- Spinach
- Mushrooms (optional)
- Salt and pepper
Method;
Whisk the egg in a bowl and make sure you season it with salt and pepper. Set that aside once done. Fry up the diced onions and bacon over medium heat and when nearly cooked, add the hashbrowns. Mix them together gently so that the flavors can come together. Once the hashbrowns or potatoes are slightly browned, add your eggs and mix gently until the eggs are cooked.
Ensure your eggs are not runny or overly cooked but slightly scrambled. You can then add your cheese or whatever other toppings you may want like tomatoes. Add the ingredients over low heat. Once done, warm up your tortilla wraps a bit and add your filling at the center of your wrap. If you are pre-making it, you can then wrap it in foil then put in a ziplock and refrigerate it. Once you are ready to eat, heat it up at the campsite in a frypan or campfire coals.
Stuffed Croissants
Another super easy and fast meal that’s also filling is the stuffed croissant. You can make this dish in a way that will suit your taste and preference. You can add whatever filling you want like tomatoes, bacon, cheese etc.
Ingredients you will need include;
- Croissants
- Ham or Bacon (you can substitute with greens or eggs)
- Cheese
- Mustard
- Ketchup (optional)
Method;
Spread the inside of the croissant with mustard or whatever other spreading you prefer. If you are using bacon, gently brown it using a frying pan or a hot plate. Add the fillings in the croissant over the hot plate so that it can warm up and also to give the cheese a chance to melt up. Don’t let the croissant burn especially if cooking over coals.
Pancakes
Another common breakfast dish that is loved by both kids and adults are pancakes. Most people have their own way of making pancakes depending on their preference and the ingredients they have. An option many campers may have not yet tried out is making pancakes using a camp oven. Dutch ovens tend to be fantastic for camp cooking generally. When planning on cooking with a camp oven, one may need to wake up earlier to get the fire going as well as getting the coals ready. Therefore, if you are in a rush then this may not be an ideal option.
Ingredients you will need include;
- 3 Large eggs
- ⅔ cups of Milk
- ½ a cup of Flour
- A Teaspoon salt
- A tablespoon of sugar
- ¼ Vanilla extract
- ¼ salt
- Butter or oil
Method;
Mix all dry ingredients at home if possible. When you are ready to start cooking, add the wet ingredients to the dry ingredients. Ensure you thoroughly whisk the eggs so as to have a lump free mixture. Once your dutch oven is heated, add 2-3 tablespoons of butter to the oven so as to grease it. Pour in your mixture to the hot camp oven. Don’t stir it and add berries on top and cover it with a lid or coals. Cook for 15-20 minutes. You will know it’s cooked when you don’t see any liquid and the edges will look golden and crispy.. Check the center of the pancake as well. After sometime you will see the pancake rising and be fluffy. Once it’s fully ready, you can serve it with more fruit or coat it with syrup or some honey.
Breakfast in a jar
A breakfast jar is a quick and healthy breakfast that is also easy to prepare ahead of time and you can easily store it in your cooler to keep it fresh. This is a perfect option especially if you don’t want to cook in the morning but you still want something tasty.
Ingredients you will need include;
- Oats
- Yogurt
- Chia seeds
- Fruits (berries)
- Peanut butter (optional)
- Almond milk (optional)
Method;
In a mason jar, mix all the ingredients together. If the mixture seems to be too thick for your liking, you could add some milk to make it lighter. Tightly seal the jar and store it in your fridge or cooler.
